This hands-on, application-focused five (5) day course, developed in collaboration with Scuola Nazionale di Pizza, will teach you to handcraft traditional artisanal Italian pizzas, using authentic techniques and methods, to master the art of making the three essential types of traditional Italian Pizza, Classic Round Pizza, Pizza by the Meter and Pan-Tray Pizza, using the contemporary processes of long and cold rising (proving) of dough, including a wide variety of toppings.
The students’ competency will be assessed by a Scuola Nazionale di Pizza, API Certified Master Pizza Instructors through the course, leading to program certification. The final certificate of completion will be awarded by ICCA Dubai in collaboration with the Scuola Nazionale di Pizza, Italy, recognised by the Associazione Pizzerie Italiane (API).

The Artisanal Pizza Course will be delivered in forty (40) guided learning hours over five (5) days, from 09.00 AM to 05.00 PM each day, covering theory, hands-on practical training and product presentation.
ICCA Dubai’s IWP (Industry Internship / Work Experience Placement) Program is an industry integration initiative specially designed for students wishing to join the industry as Professional Chefs by way of regular employment or an internship leading
to work placement.
The IWP Program is separately conducted in addition to the 620 hours of intensive on-campus guided learning and training, which comprise our Professional Program.
The IWP arrangements are in the form of either regular employment to begin with, or an industry internship generally of 6 to 12 months’ duration, successful completion of which would lead the student chef to a regular work placement.
