Method of Preparation
- Season the fish with salt and pepper, dust in the corn starch and set aside.
- In a mixing bowl, mix cornflour, all-purpose flour with water to a slightly thick consistency. Whisk in the egg white and season with salt and curry powder and set to rest for few seconds.
- Blanch the potato in oil for 1minute then in a baking tray season with salt and paprika powder and finish in the oven 180°c for 15minutes or deep-frying until golden brown.
- In a mixing bowl combine the ingredients for making the dip and mix thoroughly.
- Dip the seasoned fish into the batter to coat properly then deep fry in medium hot oil 200°c until golden and crisp. Then assemble the fish, chips, and dip in a platter and serve hot.
