The USA Cheese Specialist Certification Program – Graduation Dinner January 2021

The Graduation Dinner for the USA Cheese Specialist Certification Program took place with a gastronomic finale, a Fine Dining dinner on Wednesday, January 27th at the International Centre for Culinary Arts, Dubai.

The Graduation Dinner for the USA Cheese Specialist Certification Program took place with a gastronomic finale, a  Fine Dining dinner on Wednesday, January 27th at the International Centre for Culinary Arts, Dubai.

The certified program consists of three progressive certification levels- Associate, Intermediate and Advanced. Upon the completion of all three courses, the chefs were awarded the designation of USA Cheese Specialist along with a ceremonial double-handed knife with the Guild logo as well as USA Cheese Specialist patches and pins for their chef coats.

The Certified Cheese Specialist Chefs will be inducted into the global USA Cheese Specialist community, with a lifetime membership to the USA Cheese Guild. The USA Cheese Guild is a centre of excellence for cheese knowledge and education managed by the U.S. Dairy Export Council (USDEC) and industry experts.

The ceremony was accompanied by a beautiful fine dining dinner for the guests which was put together by the student chefs of Team ICCA. The extravagant dinner menu was thoughtfully designed and well crafted by the team for a quintessential fine dining experience.

Darjeeling Chamomile Lemon Fizz

Main Course

Smoked Chicken Ballotine with Fondant Sweet Potato, Honey Glazed Rainbow Carrots, and Asparagus with Mushroom Truffle Veloute

Mocktail

Smoked Chocolate Iced Tea

Dessert

Sachertorte with Mandarin Creameaux and Freeze-Dried Raspberry and Dehydrated Meringue

 

The event also saw Cocktail Zero...Non-Alcoholic Designer Drinks Mixology Show by the very popular Italian Mixologist Giovanni Depergola, demonstrating the Art & Craft of creating interesting mocktails with much ease and finesse.

The experience of creating a truly elegant fine dining spread turned out to be a great learning experience for the ICCA Professional Program Student Chefs, which left them with much excitement and delight with a sense of exhilaration & achievement.
